Nichols Winery and Cellars makes Chardonnay, Pinot Blanc and Pinot Noir in the Burgundian style. Chardonnay and Pinot Blanc are 100% barrel fermented in French Oaks, aged sur lies and goes through 100% malo-lactic fermentation. Pinot Noir is produced in traditional Burgundian style and techniques, whole cluster fermented in small open top fermenters to facilitate maximum flavor and color extraction. Cabernet Sauvignon, Cabernet Franc, Merlot and Zinfandel are also whole cluster fermented in small open top fermentators and aged in French oak barrels.
